Beets, beets, they're good for your heart. The more you eat... No, wait, there's no catchy rhyme for beets. But there should be. Beets deserve a jingle. We love them, and will take them any way they come. In fact, we were pretty sure we had tasted beets prepared every way possible until we tried Martha Clay's Pickled Beets. They're sweet and vinegary like most other varieties of pickled beets, but it's their anise notes that really set them apart. We liked them so much that we tweeted about them. Then we reached out to the "executive briner" Martha Clay for the recipe.
Sadly, Martha couldn't share his secret with us, but she did give us a different recipe for golden beets with rosemary and gin. It might not be our original ask, but like we said, we love beets.
